With spring right around the corner, most of us are ready for fresher more colorful dishes. Today we will be looking at what is called a Greek Antipasto or Greek appetizer.
Ingredient's List:
3 premade Pita breads
1 large tomato
3 medium sized cucumber
1 small red onion
2 cups of plain Greek yogurt
2 TBS of dill
1 lime
2 fresh mint leaves
Feta cheese (optional)
Greek style olives (optional)
First chop two of the cucumbers into small chunks and combine them with the Greek yogurt. Place in blender. Blend until smooth or until little to no chunks remain. Cut the lime in half and squeeze the juice into the mixture. Finely chop mint leaves into bits and add them to the mixture. Blend together for approximately two minutes. Empty the mixture into a bowl and mix in the dill. Cover and place in the refrigerator for one hour.
Once the sauce has sat, thinly slice the remaining cucumber, tomato and red onion. Cut pita breads into 1/4 slices and evenly spread the mixture onto the breads. Once complete add veggies to the breads in the order of cucumber, tomato and then onion. Top off with feta cheese crumble if so desired and serve with Greek olives. This appetizer will be a real crowd pleaser and will add great freshness and color to any table! Enjoy!
